Blasting and transfer of the grape mass in seven clay jars buried in the earth, outside a winery. Spontaneous start of the alcoholic fermentation in the presence of the stamps with regular Pigiage (immersions of the stamps in the must). Remaining with the lees for 4 months before the wine is transferred to a stainless steel tank for de-liming and bottling, in the absence of stabilization and filtration. The exuberance of Terra Ambera Amphora with its tannins and rich body invites to match exuberant white dishes such as lamb in the oven, Cretan pilaf with chicken and butter and beef carpaccio with truffle oil.
