Cultivation

  • Organic cultivation without chemical interventions

Flavor Charocteristics

Lovely youthful color and aromas of candy, caramel, white peach, rose petals and fresh flowers. In the mouth pronounced, cool acidity, moderate body and alcohol and persistent after taste. Α rose food wine with volume and density.

Vinification

The grape of the two varieties arrives at the winery in small crates. Blasting for the Muscat of Alexandria, transfer of the grape mass to winemakers and pre-fermentative extraction with recycling for 4 hours. Light pressure in a pneumatic press and transfer of the must to stainless steel tanks where it is combined with Limnio which has meanwhile been exploded and extracted for a few hours. Alcoholic fermentation with native yeasts, stabilization, filtration and bottling.

Food Pairing

Delicate in flavor and dense in structure, Roseus will pair perfectly with rich Ninoise salads, appetizers with azuilles, and dishes with garlic, olives and spices. Also ideal with a traditiond Spanish seafood paella. Overall, Roseus is a versatile and flexible wine that can play the role of a wild card, with or without food.
