Annual production: 4.100 bottles 500ml Alcohol : 13.0% Α unique combination of aromas combining red fruits, quince, red cherries and soy Το create the Retsina Garalis roze, we have combined the white Moschato Alexandria variety and the red Limnio variety. The grapes arrive at the winery in small crates. For Muscat of Alexandria we have blasting, transfer of the grape mass to winemakers, pre-fermentative extraction with recyding for 5 days and cooling of the tank so that fermentation does not start. At the time, the Limnio is put into a decanter with a few hours of extraction and part of it is sent to the Moschato tank for the blending of the two varieties. Fermentation starts spontaneously and when it is finished, quality pine resin from Halkidiki is added to the tank and recycling takes place for a week, until the wine acquires its characteristic aroma. This is followed by bottling without stabilization, without filtering and without the use of sulphite. The roze Retsina Garali is an ideal match for the ouzeri, next to squid, fried sardines and saganaki shrimps. The most adventurous wine lovers who love sushi, however, will be even more rewarded as the strong salty aromas and the characteristic ‘soy souce’ character of the wine will make it an ideal companion next to Spicy Tuna rolls with tuna, Shrimp Tempura rolls with breaded shrimp, avocado and eel sauce or a classic Alaska roll with smoked salmon, cucumber, avocado and asparagus.
