Cultivation

  • Organic cultivotion without chemical interventions

Flavor Characteristics

Generous, exuberant nose with of Black berries and plums. The aromas of aging are expressed with the aroma of dried figs, caramel, toffee and roasted coffee. Accented acidity, firm tannins, moderate body and alcohol, good oftertaste. Α Limnio for lovers of maturity and rich flavors.

Vinification

The grape arrives of the winery in small crates. Burst, transfer of the grape mass to vinifiers and alcoholic fermentation with commercial yeasts for 7 days. Light pressure in a pneumatic press and transfer of the wine to stainless tanks for malolactic conversion. Descaling, filtering and bottling.

Food Pairing

The aging character leads us to dishes with corresponding aromas: English roast beef with cognac and mushroom sauce, pork with plums and mushroom or truffle risotto. Limnio Garalis will also go well with mature yellow cheeses accompanied by fig of plum chutney.
