Cultivation

Flavor Characteristics

Aromas of dried plums, black cherry, butterscotch and nuts. Accented acidity, round tannins, moderate body and alcohol and persistent aftertaste. A Limnio mature, rich, with excellent structure and a rich mouthfeel.

Vinification

The grape arrives at the winery in small crates. Blasting, transfer of the grape mass to vinifiers and alcoholic fermentation with commercial yeasts for 7 days. Light pressure in a pneumatic press and transfer of the wine to stainless tanks for malolactic conversion. Descaling and transfer to old Greek oak barrels from Metsovo, more than 5 uses, 200lt and 300lt capacity where the wine matures for 6 months.

Food Pairing

Limnio of Lemnos with its exuberant character is ideal to accompany meat dishes such as roast lamb or goat in the oven or on the spit. Its gentle tannins make it equally enjoyable alongside a beef liver or a barley with king mushrooms. It will work equally well with vegetarian aubergine dishes but also with mature cheeses such as an aged Gruyere.
